ammonium sulphate is highly soluble in water and competes with protein to form hydrogen bonds with water.
different proteins have different number of hydrogen bonding interactions with water depending on charge or polarity of residues exposed on the surface of a particular protein. so one can precipitate different proteins with different concentrations of ammonium sulphate.
this method is not limited to igG or igM.
