Bioactivity and functionality of plant and food compounds can be tested today using cell cultures, and identifying the complex biochemical changes, induction of genes and change in protein content.
Protein chips, DNA arrays, analysis of riboregulators, metabolomics, are methods that match well the need to study individual compounds, and provide responses to answers as "what is the effect of…? More and more can be said on the importance of flavonoids, tannins, and antioxidants in healthy beings. One section of this topic will be the effect of new formulas (i.e. the preparation of emulsions for preservation of fruits and vegetables, and in general the evaluation of safety of new chemicalmixtures intended for use on foods.
